Artichoke and Crab Stuffed Potatoes

Ingredients for 4 servings:

4 Yukon Gold potatoes

3 ounces cream cheese

1/4 cup whole milk

1/4 cup mayonnaise

1/3 cup sliced green onions

1 tbsp minced pickled jalapenos

2 cloves garlic, minced

3/4 cup grated Parmesan

1 pound Linda Brand Dungeness Crab meat

1 can ( 13 OZ ) artichoke hearts, coarsely chopped

Directions:

  1. Bake potatoes in a 400 degree oven for 45-55 minutes, or until very tender. Remove from oven and let rest for 10 minutes. Scoop

  2. In a large mixing bowl combine the cream cheese, milk, mayo, green onions, jalapenos, and garlic and mix thoroughly. Stir in Parmesan, crab, and artichokes.

SCOOP THE MIXTURE BACK INTO THE POTATO SHELLS, PILING UP AND DIVIDING EVENLY.SPRINKLE WITH EXTRA PARMESAN

FOR A PRETTY TOP.

PLACE POTATOES ON A BAKING SHEET AND BAKE FOR ABOUT 20-25 MINS OR UNTIL GOLDEN AND HEATED THROUGH.ENJOY!
